Really Fresh Asparagus
Two days ago it was finally ready!
We have had wild asparagus come up in the field behind our house before and we have been scanning it for a few weeks hoping to find a spear or two poking out of the grass. We found some old dried stalks from last year (the ones we didn't find) and at the base of one it looked purplish green, so I carefully broke off the top in sections. Inside was the beginning of a new spear only about two inches long. We have been watching it grow an inch or two a day and finally it was ready to eat. We decided to just eat it raw. My husband and I took turns taking bites off the top and after about four total bites, it was gone. Mmmmmmmmmm, it was tasty.

Wow...we don't have this, but we do have wild poke salad, wild onions and some wild herbs. I would love to see this in the wild.
